After the presentation of our first certified organic wine, Valpolicella Classico, which took place a year ago, we are finally proud to introduce the release of our first Organic Valpolicella Ripasso to the market. As already anticipated in our previous article on eco-sustainability and sustainable strategies supported by our Company, the entire production has been converted to Organic style since 2015 and will present our Premium Organic line on the market entirely dedicated to the attention to recycling materials and energy.
Our Premium Organic line represents the pursuit of absolute oenological quality, based on the use of technology instead of chemistry. It is the result of an even more careful selection, the grapes are harvested only in entirely natural areas, with no neighboring plots. This is to completely eliminate the possibility of contamination by other companies that produce through conventional methods.
TECH SHEET OF ORGANIC VALPOLICELLA RIPASSO CLASSICO SUPERIORE DOC
Format: 0.75 liters
Type: Organic dry red
Vines: Corvina Veronese 75%, Corvinone 20%, Molinara 5%
Oenological technique: Crushing with de-stemming of the grapes, fermentation temperature: from 21°C to 23°C. 12 days of maceration. Manual cutting with a frequency of 3 per day. The contact with the Amarone’s skins takes a period of 8/10 days at 18°C with daily pumping over. Moving in barrels at the end of May. Complete malolactic fermentation.
Aging in oak barrels: 12 months
Analytical data: Alcohol 14% Vol
Organoleptic characteristics: Bright ruby red color, expresses a fragrant fruity and it is delicate with notes of ripe red fruit on the palate.
Serving method: Serving at 18°C taking care to uncork the bottle at least one hour before consumption.
Gastronomy: Combines well with meats, also white, roasts, stews and mature cheeses.
