The grapes are hand-harvested and pressed with their skins until the following morning, after which racking and fermentation will occur.
This pre-fermentation cold maceration results in a wine perfectly balanced in all of its components, with delicate hints which are characteristic of indigenous grapes.
Salmon pink colour. Wine with a bouquet of roses, red fruits like strawberries, and blueberries; easy on the palate. Fresh and delicate.
Excellent pairing with shellfish appetisers and fish second courses, but still exquisite even with a good pizza.
